I tried several different methods to develop this recipe. At first, I thought it was a custard-based ice cream made with eggs. But the result of that attempt was actually my least favorite. The texture was not very smooth and the taste of eggs was strong. The mascarpone was too subtle.
But I’m glad I stuck with it. Because we found that the simple combination of mascarpone, condensed milk, cream, and milk creates a perfectly smooth, creamy, barely tangy ice cream that you’ll want to eat again. I was in paradise.
This ice cream goes perfectly with fruit. That’s not surprising. Fresh fruit and cheese go so well together. everytime. But I like to take it up a notch with grilled peaches, warm berry sauce, and even baked apples. You can also put some salted caramel sauce on it and add a fork to it. I’m done.

What is mascarpone?
Mascarpone is an Italian cream cheese. It’s not the type you put on a bagel. It will be richer, softer, and less sour. This is the cheese found in tiramisu and certain frostings. Think of it like Philadelphia’s elegant cousin spending the summer in Milan (a “vacation”? What a luxury!).
The difference in taste of this wonderfully spreadable cheese is due to its high milk fat content. It is made using fresh cream instead of milk. And just like you can tell the difference in taste when you use heavy cream in your sauce, you can tell the difference here too.

You might need to give some thought to the fact that even if it’s a cheesy ice cream, you’re actually suggesting a similar flavored ice cream. But I really love trying all the ways to make this dessert. So if you came here for the mascarpone ice cream, I believe you’ll be adventurous enough to try the other ice creams as well.
Macaroni and cheese ice cream isn’t the most polarizing variety I’ve developed, but it ranks high in that regard. Some people at my table liked the way the ice cream melted into a slightly savory aftertaste, like butterscotch or caramel. Some of them were not so keen on adventure.
