Welcome to the weekend! Can you believe that today is November 1st? I’ve been feeling a little sick all week, so I’m enjoying a relaxing weekend at home with some hot tea and honey to quench my thirst.
I have a ton of books (metaphorically, of course, since they’re all on my Kindle) and a few games waiting to be played with my kids. We all came home today and are loving it. Now that most of us have grown up, it’s unusual for most of us to be home at the same time, so we try to make the most of it.
About this week’s blog: Soup season is officially here. I don’t know about you, but I can happily live in a cozy soup bowl all fall and winter. To make things easier (and even tastier), I’ve compiled the top 10 fall soup recipes people are making right now.
This Dutch oven pot roast recipe is a timeless classic. Carrots and onions are simmered in a rich broth for hours, and the beef becomes so tender that it falls apart on its own. How could you say no?
These Cream Cheese Mashed Potatoes are an even better version of the classic. We’re talking velvety smooth potatoes bursting with rich cheesy flavor. This is the kind of side dish that everyone will be talking about long after the potluck is over. (And you’ll want a scoop of this potato with a great pot roast!)
Before we move on, yes, I know how weird this sounds, but once you try this Cheesy Broccoli Cornbread, you’ll understand. I’m the type of person who starts off by thinking, “I think I’ll just take a few pictures,” and then always ends up going back.
The first time I threw some broccoli florets into the air fryer basket, I honestly didn’t have high expectations. But when the timer went off and I opened the basket, I was excited by how beautiful the air-fried broccoli looked. The edges of the florets were golden brown to slightly burnt, and the stems were bright green and not at all mushy. This is one of my go-to snacks and easy sides when there’s only a few people in the house.
Classic pumpkin bars with cream cheese frosting are a dessert so soft, moist, and melt-in-your-mouth that you’ll wonder why you waited until fall to start baking with pumpkin.
You can taste every spoonful of this M&M ice cream. The unmistakable crunch of M&Ms collides with the luscious smoothness of vanilla.
What I want to eat: My brother made this chicken pot pie casserole this week and raved about it, so I’m craving it now. I’m planning to put it back on the menu later this week and my youngest son is thrilled with it.
My favorite this week is this new board game, Wingspan. I played it for the first time just over a week ago, and I’ve already played it many times. I love it! If strategy-based games can actually be relaxing, this is the one that is. It’s relaxed, non-competitive, and engaging without being overly complex. It’s almost ridiculously fun. Have you tried it?
What I’m listening to: “Night Diving and Willful Blindness” by Max McNown. He was the first country-folk artist my son introduced me to and I really enjoy his music.
βFor I am convinced that neither death nor life, neither angels nor rulers, nor things present nor things to come, nor powers, nor height nor depth, nor anything else in all creation, will be able to separate us from the love of God in Christ Jesus our Lord.β Romans 8:38-39 ESV
I hope you have a wonderful week filled with lots of little things that will make you smile!
