    Chicken divan is a traditional American casserole with chicken, broccoli, cream sauce, cheese, and crunchy toppings such as buttery breadcrumbs or crushed crackers. It is named after the Divan Parisien Restaurant in New York City, which served original cuisine in the early 20th century.

    How to make a casserole perfect for nostalgic weeknights

    Season the chicken and cook until golden brown Saute the onion and celery in the melted butter (you can add frozen broccoli at this step if using) Stir in the flour (this will help thicken the casserole) Drain the glaze from the pan and scrape up any browned bits for maximum flavor Add all the liquid here to keep it happy and saucy and simmer until thick Stir in the cheese, chicken and broccoli Sprinkle everything with the crushed butter Top with crackers in an even layer Bake until bubbly and golden brown

    Use white or dark meat. Chicken breasts, chicken breasts, and thighs all work well here. Reduce preparation time. Use leftover rotisserie chicken (skip steps 1 and 2) or substitute frozen broccoli to further reduce prep time. Please choose the wine you would like to drink.     1 1/2 lb boneless skinless chicken breast or thighs cut into 1 inch chunksKosher salt and freshly ground black pepper taste5 tablespoon unsalted butter divided1/2 medium sweet onion diced1 rib celery diced2 cloves garlic chopped1/4 cup all-purpose flour1/4 cup dry white wine1 3/4 cup chicken stock¾ cup fresh cream1 1/2 teaspoon dijon mustard4 ounce shredded sharp cheddar cheese⅓ cup freshly grated parmesan cheese4 cup small broccoli florets2 tablespoon chopped fresh parsley leaves

    Instructions

    Preheat oven to 375 degrees Fahrenheit.
    Season chicken with 1 teaspoon salt and 1/2 teaspoon pepper. Melt 1 tablespoon butter in a large cast iron skillet over medium-high heat. Working in batches, add chicken to skillet in a single layer and cook until golden brown, about 4 to 5 minutes. Set aside.
    Melt the remaining 4 tablespoons butter. Add onion and celery and cook, stirring occasionally, until softened, about 3 to 4 minutes. Stir in garlic until fragrant, about 1 minute.
    Whisk flour until lightly browned, about 1 minute.
    Add the wine and stir, scraping up any browned bits from the bottom of the pan.
    Add chicken stock, cream, and Dijon and mix. Season with salt and pepper. Bring to a boil. Reduce heat and simmer, stirring frequently, until reduced and slightly thickened, about 3 minutes.
    Remove from heat. Stir until cheese is melted.
    Stir in broccoli and chicken until well mixed. Sprinkle with toppings.
    Place in the oven and bake until golden brown and bubbly, about 30-35 minutes. Let cool for 10-15 minutes.
    Serve with parsley if you like.
